"Luís Patrão and his father, Dinis, farm two small plots of white grapes planted in sand, clay and limestone. Patrão ferments his cercial in stainless steel, and his bical in older barrels, blending the two into this oceanic white. Think Dungeness crab for the limestone buzz of acidity, or sea bass and wild mushrooms roasted in a wood oven to pick up on the tart apple, light mushroom stock and lemon-blossom flavors.
